I love this salad for lunch or dinner, you can swap out any ingredients you like. This makes about 2 serves.
1 cup chopped Chinese cabbage
1 med carrot - chopped
1 red capsicum - chopped
half a bunch of celery - chopped
2 tablespoons slivered almonds
1/4 cup crispy noodles (I use Chang's)
BBQ chicken (however much you like)
dressing:
1 tablespoon fat-free French dressing
1/4 teaspoon reduced-salt soy sauce
Simply combine all the salad vegetables, top with the chicken, add the dressing and sprinkle the almonds and noodles over the top.
